As in many other countries, we eat potato salad as well.
There are various kinds of potato salad and the tastes differ from home to home. But the most common and basic seasoning is a mayonnaise. Most of Japanese mayo is made from egg yolk, soybean oil(rapeseed oil), and rice vinegar, which tastes quite different from Western mayo, more rich and creamy.
Here is the recipe for the basic Japanese potato salad.
Cooking time: 20mins
300g potatoes(じゃがいも), boil and peel
1 slice of ham(ハム), cut into strips
1 egg(卵), boil
1/2 cucumber(きゅうり), slice
1/8 onion(玉ねぎ), slice
2~3 tablespoon mayonnaise
a pinch of salt
In a bowl roughly mash the potatoes. Add chopped boiled egg, stripped ham and mix. Add sliced cucumber and onion after sprinkling salt and draining water. Put the seasonings and mix all together.
I love to add 2 tablespoon of just-ground white sesame to this recipe. It gives off a savory smell and adds a roasted flavor.
